salmon-halibut pasta


Now this is a real treat for us! Fish is usually too expensive for us, but it went on sale so we got to have a treat!

This is a nice change from traditional way to eat fish.

serves about 6

6 oz of salmon

6 oz of halibut

5 green beans cut

about 2 cups cut broccoli

1 tomato cut up

1-2 peppers sliced

2 cups spinach

olive oil

parmesan

salt pepper

basil

3/4 pkg brown rice spaghetti cooked

Bake salmon and halibut in the oven till cooked.

fry the veggies (except tomatoes and spinach). add tomatoes, basil, salt, pepper and spinach.

Turn off the heat and add cooked spaghetti and olive oil, toss.

Serve with cheese if you want but just as good without

 

Yummy balls


These are EASY! I have had a really bad cold and 3 kids and we still we able to make them with no fights, no tantrums and little mess!

I made myself a protein version of these (just add 5 scoops protein powder). My son saw me eating them and flipped out! (he is 2) he wanted one so bad. I was told not to give kids so I figured we would make some. Gives the kids something to do and its so healthy.

1/2 cup coconut

1/2 cup oats

1/2 cup ground almonds

1/2 cup almonds

1 tbsp coconut milk (or any liquid but thicker is better i used the canned stuff)

1/2 cup dates

1/4 cup coco powder

1 tsp honey ( omit if you don’t want it to be sweet)

place everything in a food processor and blend. form into balls than flash freeze (on a baking sheet) then place into bags and store in freezer (or fridge) you can take them straight out of the freezer and eat they thaw quickly! I made about 60 small balls

Dairy free milkshake


I cannot tell how I have missed milkshakes! But I have missed them!

2 cups of almond milk

6 strawberries

5 ice cubes.

(protein powder option for a filling milkshake)

all in blender, blend and enjoy!

coconut protein chocolates


Recipe 2 for protein. This one is like a candy bar but a little better for you 🙂

about a cup melted chocolate
1/2 cup raw oats
1/2 cup shredded coconut
1/2 cup ground almond
1 tbsp honey
1 tbsp coconut cream (or milk if you don’t have cream)
5 scoops protein powder

in a chocolate mould place a small layer of chocolate on the bottom
in a food processor combine everything, then place in mould on top of chocolate, top with a little more chocolate to cover. cool then pop out of mold. This I am also keeping in the freezer. This is like a bounty bar just much better for you 🙂

Protein bars


Lately I have been eating protein bars after work outs or when I am too busy to eat. I was eating ones with trace amounts of gluten and diary and had a pretty bad reaction, then decided to make them. I couldn’t find a good recipe so I made one up.

Chocolate protein bars:

6 Pitted Dates
1/4 Cup Almond
1/4 cup shredded coconut
1/4 Cup almond flour
1/4 Cup nut butter (almond, tahini, peanut, cashew ect)
1 tbsp honey
2 1/2 protein powder
1/3 cup coco powder
50g Dark Chocolate

Directions:

Combine all ingredients into a food processor and blend until it reaches a dough consistency

Heat chocolate up on stove until melted pour small amount on the bottom of a pan lined with partchment paper. cool slightly add batter, top will rest of chocolate (option you can add an extra scoop of protien to melted chocolate as well)
cool then cut . I am storing mine in the freezer.

My husband wanted to share this.

he thought there was something funky going on with this one and wouldn’t let us eat it.

A new way to have my smoothies!


I tend to have a lot of smoothies. Sometimes I don’t get to have lunch or snacks running after children so these are my go to (add protein powder if I miss lunch completely). My mama mentioned she likes to add spinach. My first thought.. Yuk! but you really do not taste it! he is a smoothy with plum banana and spinach. Too green right, the kids will notice for sure.. Watch my magic trick!

Add blackberries and it turns purple

Now that’s a tasty smoothy!

Serves about 3 :

one banana

3-5 prune plums (frozen)

about 2-3 cups raw spinach

1/2 cup blackberries (frozen)

(optional baby carrots add water and carrots in the beginning, blend then add other ingredients).

My husband said I had ruined a good smoothy when he saw me adding spinach, but he drank 2 glasses 🙂

Avacado pudding


I promise its better than it sounds! and super easy!

2 avocados, ripe
2 medium bananas, ripe
6-8T unsweetened cocoa powder
1t vanilla extract
1t cinnamon
1.5 scoops Raw protein powder [opt]

In a food processor, combine the avocado + banana and process until smooth. Scrape down the sides of bowl as necessary.
Add the cocoa powder, vanilla, cinnamon, and protein powder [if using]. Process again until smooth.
Refrigerate until ready to serve and add any topping you like.
Store in a sealed container and eat within 2-3 days.
Do not use a frozen banana for this

For my daughter


My daughter is thin and tall, it is really hard to find her nighties the arms are always long and too short in the body. It is also almost impossible to find them these days. My daughter loves them! So I decided to make her one and she picked the fabric. I did not use a pattern so it isnt perfect but I am pretty proud of myself! took me about 2 hours and she was able to wear it to bed.

It’s a little longer than I had intended but she loves it 🙂
