creamy goatcheese pasta

I love a nice creamy sauce and this one is so easy!!!

I did this with shrimp but you can use anything, chicken , bacon sausage ect….

I started with a little butter and minced garlic in a frying pan, and then added my raw shrimp.

when your shrimp is about half way there add soft goats cheese and a small amount of pasta water.

then add your pasta and you are done!!!!


Easy pizza crust :)

You know those frozen frisbees you pay 10$ for in the store? you know the ones that the topping seem to fall off of for some reason? and they taste like cardboard?….. I used to buy those too until I found this recipe!

This recipe is awesome! and for a large pizza I estimate the crust to cost no more than about 2$ for a LARGE FRESH crust!

2-1/2 cup rice flour (i like brown rice flour)
1 pkg quick-rise yeast
1 teaspoon salt
1/2 teaspoon xanthan gum
3 tablespoon olive oil
1-1/2 cup warm water; divided (120-130 degrees)
1 tablespoon honey

Combine flour, yeast, salt and xanthan gum in large bowl. Stir in 1 cup water, olive oil and honey.

Use hands to work dough (dough will be soft and crumbly). Add just enough of the remaining 1/4 cup water to hold mixture together. Knead dough in bowl 5 minutes. Cover; let rest 10 minutes.

pour a small amount of olive oil on a pizza stone and roll (or work out dough with your hands) on to the stone and bake for about 5 minutes in a 350 degree oven( though this isnt nessary i found it stopped the crust from getting soggy with the sauce). then top the pizza and cook normally. 🙂 this crust also freezes well after cooked.

A moment of relaxtion please!

The few times I get a minute I love to have a warm tea and some of these biscotti’s and just curl up on the couch before my silence is taken away.

I have adapted this recipe to make it more cost affective than the original.

Cranberry almond biscotti

3/4 cup of rice flour

1/4 cup ground almond

3 tbsp tapioca starch

2 tbsp corn starch

3/4 tsp xanthan gum

1/2 tsp  baking powder

pinch of salt

2 eggs

1/2 sugar

1/2 tsp almond/ vanilla extract

3/4 cup of silvered almonds (toasted if you want more flavour though I usually dont)

1/2 cup dried cranberries

*Preheat oven to 325

whisk all flours and dry ingredients together

in a separate bowl beat eggs sugar and extract together, slowly add dry ingredients then the almonds and cranberries.

then using wet hands form into a rectangular log on a grease baking sheet and bake for 30 minutes.

let cool for 5 minutes then cut into strips and toast each side in the oven.

cool and enjoy with a warm tea 🙂

I have never had regular biscotti but I love these and they are always a hit 🙂

Take two

We have a large family so I have to split my son’s birthday into two parts one for family and one for friends. yesterday was the family one… he wasnt thrilled with the lemon cake… i guess he doesnt like lemons much. for tomorrow I made a second cake.

This cake says boy a lot more. I have my hubby to thank for the art work!

This is a gluten-free carrot cake!!!!

pretty easy and inexpensive cake! 🙂

2 cups of  brown rice flour

1 scant tsp of xanthan gum

1 cup of sugar

2 tsp baking soda

2 tsp baking powder

1/2 tsp salt

1 tbsp pumpkin pie spice ( I just use cinnamon because hubby doesnt like it|)

1  1/4 cups apple sauce

3 large eggs

3 tbsp vegetable oil

3 cups grated carrots

Heat oven to 350. grease your cake pan and dust with rice flour

in a large mixing bowl blend all your dry ingredients. in another bowl mix your eggs and apple sauce and oil well then add your carrots.

add them to your dry ingredients .pour into pan and bake in the oven for 1 hour or untill fork comes out clean.

This cake is quiet good you probably wont know its gluten-free. for a vegan one use 3/4 cup egg substitute.

I hope he likes this better than the lemon cake:)

OH BOY!!!!

My son is turning ONE tomorrow…. went by so fast! for his gluten free birthday cake my daughter insisted it be PINK all of it with PINK hearts! it was her gift to him…

it is a rice flour lemon cake with lemon curd and a lemon icing:)


1/2 cup earth balance/ vegan butter, softened
1/2 cup sugar
2 eggs
2 tsp vanilla / or 1 lemon rind and juice
1 1/4 cups rice flour
1 teaspoon baking powder

Preheat oven to 350°F. grease baking pan. Set aside. Cream butter with sugar in a large bowl. Add eggs and vanilla/ lemon,. in sperate bowl add flour and baking powder and mix, then add to the other ingredients. Pour batter into prepared pan. Bake for 40 to 45 minutes

this makes really good cup cakes as well:)

Interesting Experiments

When it gets close to pay-day the cupboards start looking a little bare and have odd things in them…. today for lunch I couldn’t figure out what to make… We had a can of lentils (my cousin is shaking her head right now) a can of refried beans… so i decided to try making a veggie burger. The result … delish!!!

Veggie Bean burgers!!

1 can of refried beans

1 can of lentils (or the equivalent using dried beans)

1/4 of a red onion chopped fairly fine

about 2 cups of spinach wilted and chopped

enough rice flour (chick pea would be better) to bind it a little

mix  it all together it will be more like  a batter not a patty

in a non stick pan put in a good amount of oil and place your patties in for about 3-5 minutes a side until they are brown and crispy!

I don’t have any pictures as this was not planned and it is all eaten!!

This burger is a great source of fiber and protein:)

Healthy meatballs

Since I have 2 kids most of my cooking is for them. I am always trying ways to add extra veggies when ever I can. This recipe “hides” tons of veggies in it. I do believe kids should see and eat their veggies but I like to add more nutrition and eat a little less meat (as most of us eat far too much).

to start I added

about 7 baby carrots

1 pepper

half a red onion

3 cloves of garlic

a bowl of fresh spinach i wilted in the microwave

put it all in the food processor untill blended, add to about 1.5 lbs of bison (or beef)

add an egg and enough bread crumbs ( I used a bread that had sunflower seed and flax, this gave it a nice crunch and texture) and rice flour  to hold it together and season with salt and pepper.

form into balls and place on a pan. cook in a 350 degree oven  for 30 min or until compleatly cooked.

I added these to my spaghetti and tomato sauce, yum!

and my daughter ate every last bite:)….. you’ll never know they are half veggies

Warning these are very filling but packed with nutrition!!!

after a very busy weekend I had not cooked a good warm meal in a few days so i decided to attempt stuffed chicken. …. it was a bit of an experiment and it was great!

To start   roast Garlic  and red peppers in the oven (350) with just a drizzle of oil.

When fully roasted scoop out cooked garlic and mash in a bowl (set a side). Cut up peppers into strips. in t separate bowl mix goat chevre and spinach (creme cheese could work too)

Take out your boneless skin less chicken breast and place between 2 pieces of parchment paper and smash them untill they are thin. Then spread the mashed roasted garlic over the one side. then add a few strips of pepper, and  the cheese and spinach.

then roll up the chicken so that the filling will stay in and use skewers to hold it together.

place on a pan drizzle with a little oil and season with salt and pepper and italian seasoning.

bake in oven until chicken is fully cooked and serve:)

I served this with roasted Veg.

I of corse have tons of ketchup on my plate… but that because I LOVE ketchup 🙂

Roasted Veg is quiet simple:

peeled and chopped: parsnips, beets, carrots and yam

red onion, and whole garlic

add all to a roasting pan and add oil, season with salt and pepper,

when almost done add chopped up zucchini. I love roasted veg in the winter its soo good:) My kids love it tooo!!!!

happy birthday hubby

this is the cake i made fir my hubby and very good friend for their co-birthday!!! it is gluten and dairy free and it has a layer of my black bean fudge in it!!! cannot wait to try it:)

Black bean fudge

not too sure where this recipe came from, but I have changed a few ingredients to make it easy and cheaper.

this is so easy these are all the ingredients you need… if you don’t have a dairy problem feel free to use any kind of butter you wish.

first thing to do is rinse your can of beans…. you can use non canned but i just find this easier.

PLEASE rinse them well, rinsing your beans will help for you to not get gas from this fudge!!!!!

ok next put all your ingredients into the food processor… yes you need a food processor for this a blender wont do it.

so you need 1 can of beans

1/4 cup plus 2 TBS of butter

3/4 cup of cocoa

2 tsp of vanilla

1-4 tbsp of honey

(option of adding chopped up chocolate)

blend untill smooth

then place plastic wrap or wax paper (works better) over a dish


then pour batter into dish and cover with more plastic wrap and press down

now place in fridge or freezer to chill and set, then take out un wrap cut and eat!!!

My husband was so shocked by this recipe! you’ll never know it is beans! …

the question will kids eat it????…

YES!!! my daughter loves these so much!!!
