OH BOY!!!!

My son is turning ONE tomorrow…. went by so fast! for his gluten free birthday cake my daughter insisted it be PINK all of it with PINK hearts! it was her gift to him…

it is a rice flour lemon cake with lemon curd and a lemon icing:)


1/2 cup earth balance/ vegan butter, softened
1/2 cup sugar
2 eggs
2 tsp vanilla / or 1 lemon rind and juice
1 1/4 cups rice flour
1 teaspoon baking powder

Preheat oven to 350°F. grease baking pan. Set aside. Cream butter with sugar in a large bowl. Add eggs and vanilla/ lemon,. in sperate bowl add flour and baking powder and mix, then add to the other ingredients. Pour batter into prepared pan. Bake for 40 to 45 minutes

this makes really good cup cakes as well:)
