Don’t like pasta salad?

you might just not had the right pasta salad! I am not a fan of the mayonnaise pasta salad with egg… yuck! but this one has always been a hit!!!!

This is super easy and you could use what ever kind of pasta you wish but I like the spiral rice pasta.

to start you will need to make your own balsamic vinaigrette…. don’t worry it is easy!

you need

One clove of garlic (minced)

about 1/4 cup of balsamic vinegar

a little bit of mustard (your choice of the kind)

salt and pepper to taste

and  3/4 cup of olive oil

you can blend in a food processor or put in a jar and shake them

great salad dressing so much better for you than store-bought. Put unused portion in the fridge for up to 3 weeks.

For the pasta salad you need approx:

1 cucumber

1 pepper

1/4 large purple onion

about handful of kalamata olives

about handful of feta

3 chicken breasts and 3/4 package of rice pasta

(this will serve 4-6)

slice up all the veg and add all ingredients to the bowl. toss. eat! yum!

this is a great thing to bring to a picnic or a potluck!
