Apple Crumble


I love apple crumble! it is fairly easy to make gluten dairy free, you just need to switch the flour for rice flour, oats for gluten free oat and the butter for vegan margarine. Crumble is also one you can experiment with by adding things, like raisins or pears… really anything you want. Here is a recipe for a basic crumble:

10 small apples

some sugar (didnt measure) with some cinnamon (this is best made to taste I use less sugar when I can)

a table spoon butter

Topping:

1 1/2 cups oats

1 1/2 rice flours

3/4 cups brown sugar

3 table spoons butter

Peel and cut up apples. Pour apples into pan and add sugar and cinnamon and dollop about a tablespoon of butter in it.

in a seperate bowl mix flow, oats, sugar and butter (softened) then place on top of the apples and bake 45-60 minutes. Allow to cool for 20 minutes or so.

I like to pour cold soy milk over the hot crumble πŸ™‚ yum yum!!! great for breakfast too!!!

Something Sweet


Sometimes you gotta have something sweet… but good for you!Β  And I was really craving something sweet so I made myself a fruit salad. You dont really need a recipe but I used: 1 banana, 4 strawberries, handful blueberries, 1 apple and then drizzled honey over top! so good πŸ™‚ and your waistline will thank you for not eating an entire cake!!!!

Love love love ginger!!!! so here is ginger for dessert!!!!!

Crust:

1 1/2 cups of brown rice flour

1/8 cup brown sugar

2 tbsp melted butter

Ginger cream:

1/4 cup rice flour

3/4 granulated sugar

3 cups soy milk

3 eggs lightly beaten

1 envelope of gelatin

3 tbsp of minced candied ginger

1 tbsp vanilla

First make the crust by combining all ingredients and then baking at 350 for about 5-10 minutes. allow to cool

make the ginger cream: In a very large sauce pan, stir flour and sugar. Gradually stir in milk and eggs.

Sprinkle with gelatin and let stand for 10 minutes. cook at medium heat constantly stirring until it thickens a bit (about 15 minutes). Remove from heat and add ginger and vanilla. to make it cool down faster place sauce pan in cold water and keep stirring until it stops steaming.

pour into crust and cool 3 hours or overnight in the fridge

enjoy!!! pairs well with mango.

jerky jerky jerky!!


Trying to find gluten free beef jerky is next to impossible! So what to do? …. Make it! all you need is a dehydrator!

this is the way I make it:

A lean beef roast with as little fat as possible, cut off any extra fat. (best way to do that is to put it in the freezer for 5 hours makes slicing a breeze)

Marinade:

apple cider

GF soy sauce

garlic

salt

pepper

(I do these to taste you can do it how ever you like)

I let the meat sit in the marinade overnight

This is the dehydrator

pat the meat dry with a paper towel.

then lay out on the racks.

leave in the dehydrator until it is fully dried out, (this took me about 12 hours)

Store in the freezer, because there are no preservatives it can spoil quickly best to freeze it and take it out when you plan to eat it.

Zucchini beef burgers


Always trying to add veggies to my food! Here is another recipe that will add veggies and lower calories of your burger and still allow you to have beef.

a zucchini grated

about a 1/2 pound of meat

rice flour / bread crumbs (i used pancakes from this morning and rice flour)

an egg

4 cloves of garlic minced

fresh herbs

salt and pepper

mix everything in a bowl, form into patties and place in a hot frying pan. Brown each side and then put in a 350 degree oven until fully cooked. I added some vegan cheese to it ( I know kinda like eating a veggie burger with bacon, but its all the cheese I had).

(not the greatest picture this time but trust me the burger was good!!!)

so no recipe this time …. I had to share something….

…..Its finally becoming summer and that means……

I get toΒ  use my clothes line!!!! I love this time of year! My cloth diapers get a good sun bleaching πŸ™‚

Waffles or pancakes your choice!


Stop!!!! dont buy a mix! why spend up to 10$ for a mix that will do for one breakfast that you still have to add your own milk and eggs and oil? make your own and spend maybe 2$ on the flour!

After looking at my pancake mix one day and realising it was just sugar, baking powder and flour.. I felt dumb… I have all these ingredients. So here is my recipe!

Pancakes or waffles:

1 cup rice flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg – lightly beaten
1 cup of rice milk or soy milk
1 tbsp oil

Add all of your dry ingredients together, then add the rest and whisk untill all the lumps are gone. Use like any other pancake batter! πŸ™‚

Baked apples :)


First time I have attempted these. I did the filling like a crumble.

I cut the core out of an apple. Place them on a baking sheet.

and mixed GF oats with raisins, walnuts a little brown sugar and butter. Then stuffed the apples.

bake for about a hour to a hour and a half.

great with ice creamΒ  πŸ™‚

Multi layer lasanga


Lots of veggies in this one!!!! Great lasagna πŸ™‚

Brown rice noodles

soft goat cheese

mild goat cheese

spinach

ground beef

pepper

onion

garlic

fresh herbs

shredded zucchini

shredded carrots

crushed tomatoes

diced tomato

The amounts of each ingredient depend on how much lasagna you plan to make.

Meat layer: fry beef, chopped onion and garlic till cooked.

Cheese layer: wilt spinach in the microwave, squeeze out extra moisture and chop. Add to soft goat cheese

Veggie layer: fry onion, pepper, diced tomato. add shredded zucchini and carrots.

Assemble!

place crushed tomato on bottom of the pan, add noodles, then meat layer, noodles, cheese, veggies,noodles, tomatoes and cheese.

cook at 350 untill noodles are cooked.

Vegan Pizza


I have tried soooo many types of dairy free cheese and havent been thrilled that most soy based “cheese” is hydrogenated oils and some even contains dairy! This cheese has no dairy no soy and no gluten! how awesome eh?

This pizza has spinach, red peppers, onions, vegan cheese, black beans and olives. Make the pizza crust gluten free by making it with maple syrup instead of honey.

I loved it so did my hubby and my son… my daughter wasnt a big fan. So 3 out of 4 not too bad.

Do you see the resemblance? πŸ™‚
