sugar free apricot date squares


I felt like trying something new… so here it was apricot date squares!!

Filling:

1 cup of pitted dates

1 cup of organic turkish apricots (these are brown and the look might scare you but this is what they are supposed to look like no sulphites added and no color added)

3/4 cup of water

Base/Topping:

1 cup of rice flour

1 cup of GF rolled oats

1 tsp baking soda

1/2 tsp salt

1/2 cup melted butter

1 tsp vanilla extract

Start by adding all of your apricots and dates and water to a sauce pan. Cover and cook on medium heat for about 6-8 minutes, stirring occasionally. When it is paste like take it off the heat.

In a separate bowl whisk all your dry ingredients. Add your butter and vanilla extract and work with hands.

put 2/3 of the crumb mix in a 8×8 greased pan, press down. add your date apricot “paste” then cover with the rest of

the crumbs. bake at 350 for about 25 minutes or untill brown. allow to cool and enjoy!!!!
