Butter tart squares!!!!


I had never had a butter tart so I decided I would try… and… YUM!

Base:

1/2 soften butter (whipped with a mixer)

1 cup rice flour

1/3 cup tapioca starch

1/3 cup brown sugar

2 tbsp potato starch

1 tsp xanthan gum

Topping:

2 eggs

3/4 cup corn syrup

1/2 tsp baking powder

1/4 tsp salt

1 cup raisins

1/2 cup walnuts chopped

Whisk all dry ingredients for the base, add to the butter and work with your hands. grease the pan and add the base, press it into the pan. bake at 350 for 10 minutes, untill browned.

Now to make the topping! beat the eggs, then add the corn syrup. In a separate bowl whisk all the dry ingredients. add to the eggs and syrup. fold in the raisins and walnuts. pour over the base and bake for 35 minutes. let cool and place in the fridge overnight.
