little ingredients go far

only have 2 chicken breasts to feed 4-6 people? not a problem! Make a child favorite… chicken strips!!!

start by putting about 1-2 cups of GF corn flakes (I used mesa sunrise flakes) in the food processor till crushed.

in a container add about a cup of brown rice flour, and  a little chili powder

in another container  beat  1-2 eggs

In your third container add your crushed cereal salt pepper and seasonings (I used basil and chili powder\)

set it up in this order:

cut your chicken breast into 1 inch thick strips.

place chicken into the flour, then the egg, then the cereal.

(can you believe that is 2 chicken breasts?)

place on a pan (I put tin foil for easy clean up) and put a small amount of sunflower oil (great healthy alternative to canola). drizzle a little more oil on top of the strips. bake for 10 min at 350 then flip and bake 10 more or until fully cooked.
