Stop!!!! dont buy a mix! why spend up to 10$ for a mix that will do for one breakfast that you still have to add your own milk and eggs and oil? make your own and spend maybe 2$ on the flour!
After looking at my pancake mix one day and realising it was just sugar, baking powder and flour.. I felt dumb… I have all these ingredients. So here is my recipe!
Pancakes or waffles:
1 cup rice flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg – lightly beaten
1 cup of rice milk or soy milk
1 tbsp oil
Add all of your dry ingredients together, then add the rest and whisk untill all the lumps are gone. Use like any other pancake batter! 🙂

If you beat the egg whites separately and then fold them in they make for super fluffy pancakes

I like to do that with egg white, but then you have more dishes and takes longer than the 2 year old is willing to wait for his pancakes!

or in my case a 1 year old a 3 year old and a 25 year old waiting for pancakes 🙂
