Mixed bean salad (with Quinoa)

Hello summer!!! The sun has come out and so have the salads! This one its so light and summery!

you need:


1/4 cup lemon juice

3/4 cup sunflower oil

1 clove garlic


blend all ingredients until emulsified.


one can of mixed beans

one can of chickpeas (or equivalent of dried)

red onion chopped

red pepper chopped

(quinoa cooked)

rinse your beans well, add rest of ingredients and toss in dressing

If you would like to turn this into a meal add cooked quinoa! My kids loved it!!!
