Sweet and sour meat balls

This is not my recipe but my cousin’s recipe. It is so amazing it is worth sharing! and its so simple to make. I like that this recipe offers a great alternative to bread crumbs but substituting them with oatmeal. I changed it very slightly to work with what I had.

2 lb ground meat (I had beef but I think pork or turkey would be very good)

2 egg

1/2 c oatmeal

4 cloves garlic, minced

1 cup chopped spinach

salt to taste

Sweet sour sauce:

2/3 c pineapple juice

1/2 c vinegar

2 tbsp GF soya sauce

2 tbsp tapioca starch

1 c brown sugar

1 can pineapple tidbits or chunks

Mix together meal, egg, oatmeal, garlic and pepper. Roll into  balls and brown in a skillet with oil on medium-high. Dont crowd the pan you will have to do this in batches.

In a medium saucepan whisk together water, vinegar, soya sauce, cornstarch and brown sugar over medium heat until thickened.

Arrange browned meatballs in 8″x8″ pan, sprinkle pineapple on top

then bake in a 350 degree oven for 45 minutes. (this is perfect timing for your brown rice as well)

Serve with rice!! so good!!!!
