Simple healthy muffins

(forgive the one photo forgot to take the final product photo)

Simple ans easy muffins (pr carrot cake if you want to get technical)

2 cups of brown rice flour

1 tsp of xanthan gum

1 cup of sugar

2 tsp of baking soda

2 tsp of baking powder

1/2 tsp of salt

2 tsp cinnamon

1 1/4 cup apple sauce

1 tsp vanilla

3 eggs

3 tbsp veg oil

3 cups grated carrot

Preheat oven to 350.

in a large bowl mix all dry ingredients together. In a separate bowl beat eggs and add the apple sauce, oil and vanilla. Add to the dry mixture with the carrots. Pour into muffin tin (with or without a muffin cup) and bake until fork comes out clean.

Great, Healthy, Easy, and very inexpensive to make.
