A great summer meal!!!

This is summer on a plate!

Brown sugar crusted salmon:

This was originally my cousins recipe that I have changed a bit to make it gluten free.


soy 1/2 , lemon juice 1/2 (parts)

brown sugar 1/2 (part), corn meal 1/2

fresh dill

oil for the pan

Heat up your frying pan so it is good and hot. Add a generous amount of oil just before you add the fish.

Place salmon in lemon/soy mixture, then in corn meal/brown sugar mixture (coat well). Place in frying pan and fry untill crispy and golden brown. Transfer to a baking dish (or leave in pan if your pan can go in the oven), chop up fresh dill and sprinkle on top. Bake rest of time until cooked.

Fresh corn bread:

1 cup of liquid (milk, milk alternative or water) (I used water still tastes great)

1 egg

1/4 cup of oil

1/4 cup of honey/ maple syrup

2 cups corn meal (I used organic that was quiet fine if using a more grainy corn meal half with rice flour)

2 tsp baking powder

1 tsp baking soda

1/4 tsp xanthan gum

1/4 tsp salt

In a bowl mix all the wet ingredients, and another mix the dry. then add the dry to the wet and whisk until all the lumps are out. pour into a greased baking pan (cake pan or bread pan) on 350 until fork comes out clean.

Summer veggies:







Chop up all your veggies. Add everything but the zucchini, add a good amount of oil and roast in the oven on 350 (go in with your corn bread and fish but you can roast them at 425) half way add your zucchini.

I am sure if you are great on the bbq you could figure out how to cook it on there and not heat up your house this time of year!
