Potatoes au gratin

I LOVE cheesy potatoes! but the dairy is a big problem! so I made this with goat dairy. I also lowered the calories and fat content by adding veggie puree and watering down the milk a little. You could lower it more  by using a lower fat cheese. The original recipe for 1/4 of the dish (which I would find hard to eat that much of this!) was 27grams of fat, the way I made it was 13grams of fat.

4 russet potatoes, sliced into 1/4 inch slices

1 onion, sliced into rings

salt and pepper to taste

3 tablespoons vegan butter

3 tablespoons rice flour

1/2 teaspoon salt

1 cups goat milk (watered my down a little)

1 cup of pureed veggies (I used cauliflower)

1 1/2 cups shredded goat cheese

Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.
Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
In a medium-size saucepan, melt butter over medium heat. Mix in the rice flour and salt, and stir constantly with a whisk for one minute. Stir in milk and puree. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
Pour cheese over the potatoes, and cover the dish with aluminum foil.

Bake 1 1/2 hours in the preheated oven. Take off the foil for the last 15 min for a nice crust on top.

Cheese stuffed meatball sliders on a garlic bread bun!

Yes you heard me! And yes they were as good as they sound!

You need:

One package of ground beef

one package of ground turkey

spices of your choice (mine are basil oregano, garlic and onion)

cubed cheese (goat mozzarella)

tomato sauce

gf hot dog buns

garlic butter

In a bowl mix your meat and herbs (no I dont use fillers like bread and eggs)

the take a small amount of meat and place cheese in the center. Then form into a ball and place on the baking sheet. (my tip is to use foil or something to make easier clean up)

Place in the oven and bake on 450 for 15 min reduce to 350 for about 30 min.

in a 8×8 place some tomato sauce in, add your meat balls then bake for 10-20 minutes

place some garlic butter on the hot dog buns and bake for a few minutes or you could fry it in a pan, depends on how you like your garlic bread. Slice the buns in half and place one meat ball on and eat!


Brownie-maccaroon bars

so here it is the best of 2 worlds, brownies and macaroons! Nothing could be better!

Brownie base

1/2 cup margarine/ butter

1/2 cup sugar

1/4 teaspoon salt

1 large egg

1/4 cup unsweetened cocoa powder

1/4 cup brown rice flour

1/2 tsp xanthan gum (though I am tempted to say optional since I didn’t use it and it turned out though a little crumbly)

Macaroon topping:

2 large eggs

3/4 cup sugar

1/2 teaspoon vanilla extract

1 cup brown rice flour

1/2 tsp xanthan gum

1 package sweetened shredded coconut (7 ounces),1/2 cup reserved for sprinkling

base: Preheat oven to 375 degrees. Line a 9-inch square baking pan with aluminum foil, leaving a slight overhang; butter bottom and sides of foil (not overhang).

Place butter in a large microwave-safe bowl; melt in microwave. Add sugar and salt; whisk to combine. Whisk in egg, then cocoa and flour until smooth. Spread batter in prepared pan.

Bake  10 to 15 minutes (will not be fully cooked). Let cool slightly while preparing macaroon topping.

topping: In a medium bowl, whisk eggs with sugar and vanilla. Gently mix in flour and coconut (except 1/2 cup reserved for sprinkling).

Drop mounds of mixture over base spread gently and evenly with moistened fingers. Sprinkle with reserved 1/2 cup coconut

Bake until golden about 25 to 30 minutes. Cool completely, lift cake from pan, peel off foil, and cut.

you can freeze the bars as well 🙂

Cauliflower creamy pasta sauce

So this is a much simpler and I think tastier version of an alfredo pasta sauce with cauliflower.

you need:

soft goat cheese about 1/2 cup

cauliflower puree about 1 cup

butter about 1 tbsp

hot pasta water

in a pot or bowl combine all ingredients with enough water to bring to desired consistency. And that is it! you can add any other flavours you like. I fried up mushrooms and chicken to add to this.
