My Best apple crumble

THis may have some strange ingredients but its the best one I have ever made!

Start with about 6 apples peeled and cord

a cup of raisins

1/2 cup chopped almonds

tsp of vanilla

1 tsp cinnamon

2 tbsp vegan butter

2 tbsp brown rice flour

1/4 cup of white sugar

Mix this all together and place into baking dish

for the topping:

about 1 cup of oats

1 cup rice flour

1/2 cup of brown sugar

1 tsp cinnamon

1/2 cup or more of melted butter.

I go by look on this one if its way too crumbly add more butter, to wet add more flour.

add topping and bake at 350 for about 30 minutes, allow to cool for about 20 minutes.


Gluten/dairy free pumpkin pie :)

Things have been crazy in my house! and because of that this post is way over due! but here is my recipe for gluten and dairy free pumpkin pie:

(this makes a 12-inch deep dish pie … enough for 12 people apparently )

2 cans of pumpkin (plain pumpkin check your labels to be sure)

1 1/3 cup of firmly packed brown sugar

2 tsp cinnamon

1tsp ginger

1/2 tsp cloves (i omitted because I had none)

1 tsp salt

6 eggs

1 cup of heated noel nog (soya eggnog)

preheat your oven to 450 degrees

In a large bowl mix brown sugar and spices, beat in pumpkin, add eggs.

heat milk for one minute, stir into pumpkin mixture until well blended. pur into your pie crust (see previous posts for recipe)

bake for 10 minutes then reduce heat to 350 for about 45 minutes or more untill fork comes out clean.

Yummy in your tummy Muffins!

My son can eat a bucket of these he loves them so much and the plus is they are so good for him! They have apples, bananas, blue berries and black berries, very low fat,ย  No white sugar, brown rice and oats! all good nutritious ingredients

banana berry oatmeal muffins:

(double batch about 30 muffins)

1 cup of oats

3/4 cup of almond milk (or milk of your choice)

1 1/2 brown rice flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp xanthan gum

2 cups mashed banana

1 cup of honey

2 tsp vanilla

4 eggs

1/2 cup apple sauce

1/2 cup of blue berries

1/2 cup of black berries

allow oats and milk to soak in a bowl.

in another bowl combine all your dry ingredients.

in a third bowl combine all of your wet ingredients.

then combine everything in a bowl and add your berries.

Place into muffin cups and bake on 350 for about 20 min or until fork comesย  out clean.

Allow to cool and enjoy! I like to throw these in the freezer for times when I am too busy to make a snack ๐Ÿ™‚

gluten free and good for you!

This is the first time I have ever used spaghetti squash or even eaten it.

This is a great option, it is cheap to buy and easy to find. Also its very waist friendly ๐Ÿ™‚ and supplies another serving of veggies!

This is a spaghetti squash:

Cut the squash in half ( cut around the squash for long strands)

Lay flat in a baking dish and fill 1/4 inch with water. Bake at 250 for 30 min.

cool then pull strands apart with a fork

Top with your favorite sauce!

dairy free chocolate almond butter cups :)

LOVE these! so simple and so cheap to make! not to mention wont hurt a sesitive sotmach (or someone with a peanut alergy)

So I dont have amounts on this one since I just winged it, here is what you need:

dark chocolate dipping waffers

almond butter

icing sugar











in a double boiler melt the chocolate.









place meltedchocolate in muffin cups, make sure to leave the center empty cool in the fridge. fill with alond butter (about 3/4 almond butter and 1/4 icing sugar) top with chocolate and cool.







freeze extra for those late night cravings!
