Yummy in your tummy Muffins!


My son can eat a bucket of these he loves them so much and the plus is they are so good for him! They have apples, bananas, blue berries and black berries, very low fat,  No white sugar, brown rice and oats! all good nutritious ingredients

banana berry oatmeal muffins:

(double batch about 30 muffins)

1 cup of oats

3/4 cup of almond milk (or milk of your choice)

1 1/2 brown rice flour

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp xanthan gum

2 cups mashed banana

1 cup of honey

2 tsp vanilla

4 eggs

1/2 cup apple sauce

1/2 cup of blue berries

1/2 cup of black berries

allow oats and milk to soak in a bowl.

in another bowl combine all your dry ingredients.

in a third bowl combine all of your wet ingredients.

then combine everything in a bowl and add your berries.

Place into muffin cups and bake on 350 for about 20 min or until fork comes  out clean.

Allow to cool and enjoy! I like to throw these in the freezer for times when I am too busy to make a snack 🙂
