Beef and Veggie stew

Its snowing!! We dont get much snow here and I am so thrilled there is snow on the ground!!

The perfect meal to go with this snow:

Beef and veggie stew this will make a HUGE pot of soup!!

Beef or deer (large roast)

rice flour (with dried thyme, salt, pepper, ginger, garlic powder, onion powder)

2 onions

2 bulbs of garlic

1 tbsp of ginger

salt and pepper to taste

5 potatoes

3 carrots

4 parsnips

1 butternut squash

1 acorn squash

2 pkg of frozen spinach

bunch of kale

stalk of celery

broth (I used chicken but usually would use beef)

in a bowl combine rice flour with dried herbs, then dredge beef in the flour. In your soup pot and a generous amount of oil and brown the beef so it is crispy. Work in batches. DONT skip this step this will add a ton of flavour to your soup.

I used a food processor to chop my garlic and onion. Add a bit more oil to the soup pot if needed . There will be a lot of brown stuff on the bottom dont worry its supposed to be like that as long as it isnt burnt. Add garlic and onion. Fry until translucent. Then add a little water and scrap the brown bits off the bottom, blending with he onions.

Add broth and bring to a boil. Add beef and ginger,  simmer for several hours (I did about 5 hours)

Then add all the other veggies except the spinach and kale.

Simmer for about an hour till veggies are tender. Add kale and spinach.

Enjoy on a cold day 🙂
