Re-use those left overs

Many of us can’t stand eating the same thing day after day. I am not like this but my hubby is. The night before I had made steak and eggs benny with steamed veggies. I had a lot of veggies left over. I decided to make a stir fry! I had already made turkey from lunch. I just added it all to a frying pan with spices and soy sauce. This was pretty much instant and delicious!

Steak N’ eggs benny

Now doesnt that sound good? This was made by the hubby’s request. I have to admit I used a GF dairy free instant holindaze sauce. I have no idea how to make a holindaze, one day I will try 🙂

eggs (2 per person)

minute steak (1 per person)

GF english muffins (1 per person)

1 holindaze  sauce packet

Eggs benny is pretty simple!

Fry a minute streak to your tastes.

Poach 2 eggs (full pot of water with a little vinegar, break in eggs, I never time them but its a few minutes, scoop them out).

place steak on top of english muffin, then place the egg on top of the steak and cover in sauce! I also steamed some cauliflower and asparagus and poured sauce on that too!

Beef stroganoff

This is another dinner my hubby made. This dinner I refused to help him. I found him the recipe and left him to it…  He did really well!… well he had our 4 year old daughter help too so he didn’t do it completely alone 🙂

Beef stroganoff:

1 lb. ground beef
1 can beef broth
1 (8 oz.) goat yogurt (or sour cream)
1 cup chopped fresh mushrooms
3 cloves garlic
1/2 tsp. salt
1/3 c. ketchup
1 sm. onion
2 tbsp. rice
1 pkg lasagna noodles broken up
Brown beef, mushrooms, garlic and onion together until onion is tender. Add 1/2 of the can of beef broth, salt and ketchup. Mix flour with remaining beef broth and add to ground beef mixture. Fold sour cream. Heat thoroughly. Serve over noodles.

mashed potatoes with cauliflower, corn and gravy! and if your really feel like a treat add cheese as well!

jelly filled oatmeal muffins

These remind me of jelly filled doughnuts… but they are NOT fattening!

2 cups oat flour (you can grind up gf oats in a food processor but it has a different texture)

2 tsp baking powder

1/4 tsp baking soda

1 1/2 tsp cinnamon

1/4 cup brown sugar

1/4 cup yoghurt (soy, goat, cow your choice)

1/2 cup almond milk (or cow, soy, rice)

2 eggs beaten and plus one egg white

4 tbsp oil

2 tsp vanilla

jelly or jam of your choice

In a large bowl mix all of your dry ingredients. In another bowl mix the wet ingredients (except the jam). mix the ingredients untill just blended.

In a muffin tin (I use muffin cups) fill the cups 3/4 way full, add about a tsp of jelly than top with batter.

Bake in the oven at 350 for about 16 minutes or until toothpicks come out clean.

dairy free banana cream pie

Yes you can make a good dairy free banana cream pie!

For the crust:

about 2 cups brown rice flour

1/2 cup brown sugar

1/2 cup melted butter

Combine all in a bowl then press into a pie pan and bake in the oven at 350 for about 10 minutes. Take out and let cool


4 cups of milk (your choice mine is soy)

6 TBSP corn starch (though next time I will try tapioca

1/2 cup of sugar

1/2tsp salt

1 egg

1/4 cup melted butter

1 tsp vanilla

2 bananas thinly sliced

pour warm milk in a sauce pan till almost boiled (on medium), stir in corn starch,sugar, salt,and egg. Stir constantly, when thicken add vanilla. Pour 1/4 into crust then layer with 1/3 banana then pudding, then banana until your left with the top layer pudding. chill in the fridge over night.
