NO cow dairy cheese cake!


I finally have made a cheese cake that tastes like cheesecake! This one has no cow dairy and its a lower fat one too! I made it with goat yogurt (you could use cow as well). If you use regular yogurt it is way cheaper, if you use goat yogurt it is about the same.

First you need to make the yogurt into a cheese (or cheese like)

2 small things of yogurt or one large one

cheese cloth

In a big bowl line with a cheese cloth (other option is to hang the yogurt int the cheese cloth over the bowl)

and allow to drain for a day.

When you take of the cheese cloth it will be really thick… how thick should it be……

thick enough to turn upside down without it moving.

 

CRUST:

1-1/2 cups of GF graham crackers (OR rice flour 3/4 to 1/4 brown sugar)
3 Tbsp. sugar (omit if using rice flour and 1 tsp vanilla)
1/3 cup butter or margarine, melted
combine and press into a greased pan
FILLING
Pre pared yogurt cheese (should be about 4 cups)
1 cup sugar
1 tsp. vanilla
4 eggs
Beat all ingredients with mixer until well blended. Pour over crust
Bake in a water bath for 55 min. or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate 4 hours.
Blue berry sauce:
Super easy sauce! In a sauce pan place frozen blue berries (about 1 1/2 cups) and cook down add a little bit of corn starch to thicken (or just continue to cook down). cool or serve hot.
