easy Garlic pizza sauce

We just love garlic in our house! I saw this trick on a cooking show once, using roasted garlic. This is a easy and yummy alternative to tomato sauce.

Roasted garlic pizza sauce: for personal pizza

1 bulb roasted

1 tbsp olive oil

take out the cloves of roasted garlic and beat with olive oil till smooth.

spread over you favorite crust.

Add favorite toppings: mine spinach, tomatoes, peppers and mild goat cheese.

Homemade salsa!

When I was with my mom and sister for the weekend my mom made us homemade salsa. I have never made it from canned tomatoes before. It is so easy!

1 can of diced tomatoes drained

2 sereno peppers

2 cloves of garlic

a good amount of cilantro

Place it all in a food processor and blend till smooth. That’s it!

it wont last long!

NO cow dairy cheese cake!

I finally have made a cheese cake that tastes like cheesecake! This one has no cow dairy and its a lower fat one too! I made it with goat yogurt (you could use cow as well). If you use regular yogurt it is way cheaper, if you use goat yogurt it is about the same.

First you need to make the yogurt into a cheese (or cheese like)

2 small things of yogurt or one large one

cheese cloth

In a big bowl line with a cheese cloth (other option is to hang the yogurt int the cheese cloth over the bowl)

and allow to drain for a day.

When you take of the cheese cloth it will be really thick… how thick should it be……

thick enough to turn upside down without it moving.

CRUST:

1-1/2 cups of GF graham crackers (OR rice flour 3/4 to 1/4 brown sugar)
3 Tbsp. sugar (omit if using rice flour and 1 tsp vanilla)
1/3 cup butter or margarine, melted
combine and press into a greased pan
FILLING
Pre pared yogurt cheese (should be about 4 cups)
1 cup sugar
1 tsp. vanilla
4 eggs
Beat all ingredients with mixer until well blended. Pour over crust
Bake in a water bath for 55 min. or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate 4 hours.
Blue berry sauce:
Super easy sauce! In a sauce pan place frozen blue berries (about 1 1/2 cups) and cook down add a little bit of corn starch to thicken (or just continue to cook down). cool or serve hot.

quick noodle soup

this was pretty much instant.

small bag of shrimp

1/2 crown of broccoli

kale

Shanghai Bok choy

mushrooms

broth

soy sauce

brown rice vermicelli

Bring broth to a boil. add veggies. then add shrimp and vermicelli. when noodles and shrimp are cooked serve. top with soy if you want.

Re-use those left overs

Many of us can’t stand eating the same thing day after day. I am not like this but my hubby is. The night before I had made steak and eggs benny with steamed veggies. I had a lot of veggies left over. I decided to make a stir fry! I had already made turkey from lunch. I just added it all to a frying pan with spices and soy sauce. This was pretty much instant and delicious!

Steak N’ eggs benny

Now doesnt that sound good? This was made by the hubby’s request. I have to admit I used a GF dairy free instant holindaze sauce. I have no idea how to make a holindaze, one day I will try 🙂

eggs (2 per person)

minute steak (1 per person)

GF english muffins (1 per person)

1 holindaze  sauce packet

Eggs benny is pretty simple!

Fry a minute streak to your tastes.

Poach 2 eggs (full pot of water with a little vinegar, break in eggs, I never time them but its a few minutes, scoop them out).

place steak on top of english muffin, then place the egg on top of the steak and cover in sauce! I also steamed some cauliflower and asparagus and poured sauce on that too!

Beef stroganoff

This is another dinner my hubby made. This dinner I refused to help him. I found him the recipe and left him to it…  He did really well!… well he had our 4 year old daughter help too so he didn’t do it completely alone 🙂

Beef stroganoff:

1 lb. ground beef
1 can beef broth
1 (8 oz.) goat yogurt (or sour cream)
1 cup chopped fresh mushrooms
3 cloves garlic
1/2 tsp. salt
1/3 c. ketchup
1 sm. onion
2 tbsp. rice
1 pkg lasagna noodles broken up
Brown beef, mushrooms, garlic and onion together until onion is tender. Add 1/2 of the can of beef broth, salt and ketchup. Mix flour with remaining beef broth and add to ground beef mixture. Fold sour cream. Heat thoroughly. Serve over noodles.

Comfert bowl of love!

This is a dinner my hubby made!

This is one of his favorite foods!

Chicken strips from my recipe on here. To make it easier you can use canned baby food.
