Everything in my kitchen meatballs

The budget as been really tight in my house and I refuse to throw any food away. I went through my fridge and noticed a had a few veggies going bad but they didn’t really go together. I had celery, spinach, snap peas, onion, and a zucchini…… I decided I’ll blend it all up put it in meat balls and hopefully no one will notice what I have done. The result… Delicious! I couldn’t believe it!

1/2 zucchini

about 2 cups snap peas

5 sticks celery

1/2 pkg spinach wilted

1/2 onion

1 bulb garlic (less if you’re not a fan of garlic but you don’t taste it much)

1″ of grated ginger

1/2 cup oats

1 tsp soy sauce

1 tsp Dijon mustard

1 egg

medium size pack of ground beef

In a food processor add all ingredients except beef and egg. blend till all cut up and semi-smooth. add to beef and egg and mix. Roll into ball and bake at 425 for 15 min then turn down to 350 till fully cooked.


Spinach garlic beef burgers

These are so delicious and you would never guess that there is 4 carrots and a bag of spinach in them! Plus all the garlic… keeping the colds away this time of year!

Small package of beef

1 bag of spinach (wilted in microwave then blended, squeeze extra moister out)

3-4 carrots grated

1/2 cup GF oats

1/2 bulb garlic finely minced

1 tsp onion powder

1 tbsp ginger

salt and pepper to taste

one egg

In a bowl combine all ingredients. place formed patties in a hot frying pan with a little oil. Fry 5 min then flip and fry 5 min more. Then put the burgers in the oven on 350 and bake till fully cooked (about 30-45 min depending on the size of your burgers),  if adding cheese do it at the end of the baking time.

let rest a few minutes, put on your favorite GF bun with your favorite toppings.

This burger is great for garlic lovers 🙂 and you cannot taste the veggies (yes you can see them but that’s not what counts)

Sweet ginger chicken

This is so tasty! you can also use this marinade on tofu for your vegetarian friends.

1 inch of fresh ginger minced

5 gloves of garlic minced

1/8th onion minced

1 tbs honey

1/4 cup soy sauce

4 chicken breasts

combine the garlic, ginger, onion, honey, soy sauce in a bowl. Place chicken in the bowl and marinade for about 20 minutes. Bake chicken in all of the marinade in the oven at 350 untill fully cooked.

GLuten free Healthy meat loaf

I have to admit I am not a big fan of meat loaf… but my husband loves it. So I finally after almost 8 years made it for him. THough I will not make his family’s version… lots of meat, bread and cheese…. Thats not my style, I am all about the veggies! SO this meat loaf is half veggies and made with venison which is leaner and more nutrient dense than beef.

Meat loaf:

1 1/2 lbs of ground venison

1/4 cup of oats

1/4 cup of  unsweetened almond milk

1 corn muffin (or more oats)

1 egg

1 tsp soy sauce

2 tbsp ketchup

2 zucchini

1 bag of spinach wilted in microwave or 1 small block of frozen spinach thawed

2 yellow peppers

1 small onion

5 cloves of garlic.

In a food processor add all the veggies and garlic, blend till it looks like pulp.Place veggie pulp in a paper towel and squeeze out extra moister.

in a large bowl add all ingredients then transfer to bread pan (I lined mine with tin foil for easy clean up).

bake in the oven at 350 for about an hour untill fully cooked.

spicy BBQ Meat balls in slow cooker

This made a huge batch~!  you can pre make a lot of meat balls and freeze them.

BBQ sauce:

1 large can of tomatoes

1/4-1/2 cup brown sugar

2 cloves garlic minced

1/4 cup soy sauce

1 tbsp of hot sauce

1 tsp of mustard

salt and pepper to season

Comine all (squish tomatoes to make smaller) ingredeints to slow cooker

cook for 4 hours on high

Meat balls:

2, 1 lb packages of lean beef

1, 1lb package of venison

1/2 cup of oats

1 tbsp chili flakes

1/4 onoin finely chopped

4 cloved of garlic finley minced

1 egg

1 tbsp of dijon mustard

1 tsp gf soy sauce

salt and pepper to season

combine all ingredients

form into balls and bake at 425 for 15 min then 350 untill compleatly cooked (depends on the size you made your meat balls)

add to your slow cooker and cook on low for 6 hours.

Cheese stuffed meatball sliders on a garlic bread bun!

Yes you heard me! And yes they were as good as they sound!

You need:

One package of ground beef

one package of ground turkey

spices of your choice (mine are basil oregano, garlic and onion)

cubed cheese (goat mozzarella)

tomato sauce

gf hot dog buns

garlic butter

In a bowl mix your meat and herbs (no I dont use fillers like bread and eggs)

the take a small amount of meat and place cheese in the center. Then form into a ball and place on the baking sheet. (my tip is to use foil or something to make easier clean up)

Place in the oven and bake on 450 for 15 min reduce to 350 for about 30 min.

in a 8×8 place some tomato sauce in, add your meat balls then bake for 10-20 minutes

place some garlic butter on the hot dog buns and bake for a few minutes or you could fry it in a pan, depends on how you like your garlic bread. Slice the buns in half and place one meat ball on and eat!


slow cooked pasta sauce

This is a great cheap easy pasta sauce! Thanks to your slow cooker you barely have to do anything!

This is all you need:

1 can of diced tomato

1 can of whole tomato

1 can of crushed tomato

2 small can of tomato paste

4 lbs (or so) of ground beef

6 cloves of garlic

1 onion

hand full of fresh herbs

Brown meat, garlic and onion in a frying pan. then add to slow cooker with all other ingredients. place on high for about 6 hours or low for 10.

This makes ALOT of sauce! for us it made dinner, lunch, a late snack of sloppy joes for my hubby and 2 meals worth for the freezer!


Apple chicken strips

So again I ran out of eggs and also ran out of carrot, but I really wanted chicken strips. So I used the apple sauce I made a few days ago.

For the dry mix I put in a food processor: GF oats, GF porege mix, GF cereal flakes and corn meal and oregano.

Using regular method of dry, wet, dry. Place on a baking sheet, drizzle with a generous amount of oil (sunflower).

bake about 10 min each side or until fully cooked.

Delicious! served with “cheesy” mashed potatoes 🙂 The kids loved these and so did I!!


What do you do with beet greens anyway…

I have been asked this a lot, anI have posted a few recipes with beet greens but here is a totally new one!!!

Beet green plus meatballs:


garlic (powder but i would have preferred fresh)

one carrot

large bunch beet greens

Blend this in the food processor, then fry in a pan with some veggie oil. when the veggies are cooked down a bit put them in a bowl too cool a bit. Drain any extra moisture. To this add some rice flour, I think you could just use this for a veggie meat ball or add a little refried bean to it.

Now add lean ground beef, roll into balls and bake on 425 for 15 min then turn down to 350 to finish cooking.

This made alot so I formed it into patties and froze it. (my hubby then put these on the bbq and they were sooo good!)

Great way to enjoy those veg! and these you cannot tell at all that they are half veggies.




One roast so many meals

On a very tight budget we don’t get the luxury of eating an entire roast in one meal… it usually makes several meals. The trouble is most people make the same boring roast with the same boring left overs…. Well he is number one of three recipes I have for roast!

Pulled beef sandwiches!!

1 large roast cut into 4 pieces (for faster cooking)

chili powder

garlic powder (preferably real garlic)

bbq sauce (amounts to your taste)

gf soy sauce

salt and pepper

apple juice

fresh greens

place the bbq sauce, soy sauce, garlic powder, chili powder and salt and pepper and blend together.  place meat into the bowl and marinade over night.

In the morning brown the roast piece in a frying pan. Place in the slow cooker with marinade anc cover 1/2 or so with apple juice.

Place slow cooker on high for 6-8 hours on on low for about 12. Take the beef out and shred with a fork, then return to the slow cooker for 45 minutes.

Take your fresh greens (I have chard, kale, spinach and beet greens from my garden) fry untill wilted. You will see that it will wilt down a lot.

portion out into 3 parts, in one add your greens with the beef (you could also carmalize the onions). ( I will post recipes for the other 2 portions soon)

place in your favorite bread and there you go, you can serve with fresh veg, salad or my hubby ate it with canned beans.
